
“Kansas City (Slow Cooked) BBQ Beef”
If the weather outside does not lend itself to barbequing, you can prepare this beef brisket in minutes and place in your slow cooker or roasting oven.
You can substitute 1-2 Cups of your Favorite BBQ sauce for the KC Sauce but my recipe is so good, you should make it from scratch!
I like to try and keep the brisket all in one piece but if your slow cooker is too small you can cut up the brisket into pieces and stack them in the slow cooker!
Ingredients:
3-5 lbs Beef Brisket-Leave fat on but pierce meat thru fat to allow marinade to flavor it.
2 Tablespoons unsalted butter
1 medium onion, finely chopped
1 -2 cloves of garlic finely minced or garlic paste
½ Cup of Ketchup
½ Cup Chili Sauce(Like Heinz 57)
¼ Cup Brown Sugar
¼ Cup of Cider Vinegar
1 Tablespoon Steak Sauce (A-1 works great!)
1 Tablespoon Worcestershire sauce
½ teaspoon Liquid Smoke
For the Sauce:
In a medium skillet, melt the butter over medium heat.
Add the onion and cook until softened stirring often about 5 minutes.
Add the garlic and cook another 1-2 minutes, stirring all the while.
Stir in rest of the ingredients and simmer for 3 minutes.
Put brisket into slow cooker and pour sauce over brisket.
Cover and slow cook until beef is very tender, 8-10 hours on low (200-300 Degrees)
Transfer brisket to a platter and cover with foil to keep warm.
Transfer the sauce to a medium saucepan and simmer over medium heat, stirring often until reduced and a little thicker.
If there is fat on the top of the sauce, you can skim it off or just incorporate it into the sauce if that is your taste!
Using a sharp knife, slice the meat against the grain into slices (unless it is easier to pull it apart with your fingers!
