Another beautiful day in the Rockies!!! Spring in Denver is very lush and green this year.... Lots of outdoor work to be done...Had a great BBQ last nite with Shrimp wrapped in bacon on skewers dusted with a Red Adobo rub....Very Tasty!!!
Some shrimp were wrapped in proscieuto(sp?) as well....The trick is to get the bacon cooked before the shrimp is done and gets overcooked! The way you do it is to soak the skewers for a couple of hours so they wont burn up before the shrimp & bacon are cooked! Keep turning them and if need be you can raise them off of the direct fire and either use the upper rack or turn off a burner and move the skewers off of the flame and onto the indirect grate...
