Well it is a beautiful day in Denver this morning....Heading off to the gym but on my way saw my outdoor cooking equipment was in need of TLC!!!
The time is upon us and such as it is we will try to add some value to your lives with regard to Cooking so come back in a day or two and we will have some the Aha's we have come up with!!!
The picture above was a pig roast we did a couple of years ago using a La Caja China which is an insulated box that you put the pig in and the coals go above it in the lid of the box!
I will be adding a link to the La Caja China website as they have been great to work with. I had an issue when I recieved my La Caja China that one of the legs just did not fit right when we put it together and I contacted the company and they overnited me a new leg for my box!
You can cook a 50-70lb pig in 4.5 - 5 hour....perfectly roasted and the outside skin roasted into a perfect chicharonne(pork rind like)!
