5 Chicken Breasts
5 Roasted Poblano Peppers-- Seeds &Skin removed...diced
5 large Mushrooms-- Bella preferred.
1 can Italian tomatoes w/juice
1 can water chestnuts--sliced
2 Tablespoons of Old Bay Seasoning
Olive Oil--Enough to coat peppers to roast & coat noodles after cooked.
2-3 Tablespoons of Cilantro-- Just throw the entire stalk in!
1 lb of Brown Rice Pasta--Penne, Swirls, Shells
1 Tablespoon of Beef Soup base-- disolve in water
2 cups of Mild Cheddar cheese-- Non Paleo!
3 cups of water
1 cup of strong black coffee
1 Tablespoon of Kosher Salt, Black Pepper, Smoked Paprika
1. Poach chicken breasts in water, coffee, cilantro, tomatoes & spices for about 10 min per side at simmering boil. Chicken should be cooked with no redness or blood when breast is punctured.
2. Par boil noodles for 4 minutes in boiling water and turn off water.
3. Drain noodles after 5 minutes and toss with olive oil & 1/2 of cheese in a large bowl.
4. Mix noodles with chicken, peppers, mushrooms, water chestnuts & remaining poaching marinade
5. Heat oven to 400 degrees on Bake and bake covered for 40 minutes.
Uncover for 15 minutes and continue to cook until casserole is hot n bubbly!
