This is a great recipe that will only take you minutes to actually cook!
The time is in the preparation of the ingredients....Cut all your veggies and meat BEFORE you start cooking!

Black Pepper Beef & Shrimp Stir Fry
2-3 lbs of Beef—Steak or tenderized stew meat* Cut into bite sized pieces.
1/2 lb of Shrimp—Peeled, deveined, thawed
4 Carrots—peeled & sliced
1 lg Red Onion—Red onions carmelize the best! Use Vidalia or other sweet yellow in place of the Red.
2 Calavacita or Zucchinni squash—cut into bite size pieces
4 Mushrooms—Baby bella, Portabella work best – Slice and cut into irregular pieces
1 Package of Rice noodles – I use Pad Thai Rice noodles from the asian section of your grocery.
4 Tbsp of Coconut Oil
Homemade Black Pepper Stir Fry Sauce
½ Cup of Black Pepper Sauce—found at asian markets and/or your local grocery.
2 tsp of Hoisen Sauce
½-1 tsp of Red Curry Paste
1-2 Tbsp of Spicy Brown Mustard or Dijon Mustard—Season to your own taste.
½-1 Cup of Water
1. Mix ingredients together in a non reactive bowl (non metal) until mixed and set aside.
2. Heat the ½ of the oil in the wok over high heat and add beef to cook meat until medium (pink or light red in middle). Remove from wok and set aside.
3. Reheat the wok with the remaining oil and add carrots & onions to carmelize over high heat.
Cook for approx. 5-9 minutes or until carrots are al dente’.
4. Put approx. 4 quarts of water into a pan to heat for the rice noodles and turn on high heat.
Add noodles once water is boiling and follow the directions but keep noodles al dente’ as they will continue to cook once added to the stir fry approx. 5-7 minutes.
5. Add squash, mushrooms and cook approx. 5 min and add beef.
6. Cook until beef is medium( light pink) to retain the most moisture in the meat probably about 5 more minutes of cooking time.
7. Add shrimp and sauce to the mixture and cook for 3 minutes.
8. Drain rice noodles and add to the stir fry and mix thoroughly.
9. Turn off burner and cover wok for 5-10 minutes, stirring to ensure all flavors have coagulated fully.
10. Serve immediately and ENJOY!!!!
